Raspberry Thyme Tom Collins

Ingredients

  • 1 ounce, fluid Sugar
  • 1 ounce, fluid Water
  • 1 whole Lemon, Juiced
  • 2 sprigs Thyme, Plus More For Garnish
  • 1/2 cups Fresh Raspberries, Plus More For Garnish
  • 1-1/2 ounce, fluid Dry Gin
  • Tonic Water, As Needed

Directions

    In a small sauce pan add sugar, water, lemon, and simmer until the sugar has completely dissolved. Remove from heat and allow to cool.

    Meanwhile, remove thyme leaves from sprigs and muddle with raspberries.

    Stir thyme/raspberries in with the lemon/simple syrup mixture. Continue to allow to cool to room temperature.

    Pour cooled mixture into a glass or cocktail shaker and mix/shake with your gin. Pour over a glass of ice and top off with tonic.

    Garnish with additional thyme and extra berries.
