- 1 large onion, chopped
- 2 large cloves garlic, minced
- 6 medium zucchini, thickly sliced
- 2 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. basil
- 1 tsp. crushed oregano
- 1 to 2 bay leaves
- 1 large can tomatoes
- flour to thicken
Directions

1In small amount of oil, stir-fry onion, garlic and zucchini about 3 minutes. Add seasonings. Cook 3 to 5 minutes or until just tender.

2Add tomatoes and bay leaves.

3Cover and cook over moderate heat 15 minutes, stirring occasionally. Add flour to thicken and more salt, if required. Remove bay leaves before serving.

4Serve it cold or hot as a meat accompaniment. Serves 8 to 10.
