  • 1 lb. eggplant, diced
  • 4 oz. onion, chopped
  • 2 garlic cloves, crushed
  • 1/2 c. olive oil
  • 2 green peppers, chopped
  • 1 lb. tomatoes, skinned and diced
  • salt and pepper to taste
  • 8 oz. zucchini, diced

Directions

    Heat the oil in a large frying pan.

    Add the onion and fry until golden.

    Add eggplant, zucchini and tomatoes.

    Fry vegetables gently, then cover and simmer for 30 minutes.
