Raw Hazelnut Cookies

  • 2 1/2 cups raw hazelnuts
  • 6 medjool dates chopped
  • 2 tablespoons meal mesquite pod
  • 2 tablespoons raw honey
  • 1 tablespoon coconut butter or oil
  • 1 vanilla bean scraped
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Himalayan salt

Directions

    Place hazelnuts in high power blender and blend on medium speed until a flour is formed.

    Place all ingredients in a food processor and pulse until combined and sticky.

    Take out of food processor and roll dough into 1 inch balls or press into a shallow dish.

    Refrigerate for 30 minutes and serve.

    Using raw nuts or seeds to make delicious cookies is easy, and there is no need to cook. Simply blend your favorite nut or seed into a flour, place in a food processor with a sticky dried fruit or honey and pulse until combined. Then you have your cookies! Also a great raw pie crust recipe, as a base for layer bars, or even dipped in some chocolate!
