  • 8 qt. cucumbers (2 gal.)
  • 1 c. pickling lime
  • 1 c. vinegar
  • 1 Tbsp. alum
  • 1 bottle red food coloring
  • 10 c. sugar
  • 3 cinnamon sticks
  • 2 1/4 c. vinegar
  • 2 1/2 c. water
  • 2 bags cinnamon hearts or Brachs cinnamon discs

    Peel, core and slice cucumbers to make rings.

    Mix 1 cup lime with enough water to cover cucumbers and let stand 24 hours.
