  • 5 slices bacon
  • 1 medium onion, chopped
  • 2 c. chopped, peeled tomato
  • 1 c. long grain rice, uncooked
  • 1 c. finely chopped, cooked ham
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. hot sauce

Directions

    Cook bacon in a large skillet until crisp; remove bacon reserving 2 tablespoons drippings in skillet.

    Crumble bacon and set aside.

    Cook onion in drippings over medium-high heat, stirring constantly, until tender.

    Add bacon, tomato and remaining ingredients.

    Cover and cook over low heat 10 minutes. Spoon mixture into a lightly greased 1-quart baking dish.

    Cover and bake at 350° for 1 hour, stirring every 15 minutes.
