- 5 slices bacon
- 1 medium onion, chopped
- 2 c. chopped, peeled tomato
- 1 c. long grain rice, uncooked
- 1 c. finely chopped, cooked ham
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. hot sauce
Directions

1Cook bacon in a large skillet until crisp; remove bacon reserving 2 tablespoons drippings in skillet.

2Crumble bacon and set aside.

3Cook onion in drippings over medium-high heat, stirring constantly, until tender.

4Add bacon, tomato and remaining ingredients.

5Cover and cook over low heat 10 minutes. Spoon mixture into a lightly greased 1-quart baking dish.

6Cover and bake at 350° for 1 hour, stirring every 15 minutes.
