- 1/2 cup olive oil
- 1/2 cup diced onions
- 2 tablespoons chopped garlic
- 2 tablespoons ground coriander
- 1 tablespoon ground cumin
- 2 (16-ounce) cans drained, rinsed black beans
- 1 cup water
- 1/4 cup chopped cilantro with stems
- Salt and pepper
Directions

1Heat skillet.

2Add olive oil, onion, garlic, coriander, cumin, and saute until you start to smell the spices.

3Add beans and 1 cup of water.

4Let simmer for 15 minutes then start pressing the beans with a potato masher.

5Add cilantro, salt and pepper and allow to simmer for another 20 minutes.

6Add water when needed until you reach desired
