- 2 3/4 cups flour
- 1 1/2 cups brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup oil
- 1 teaspoon vanilla
- 1 cup chopped rhubarb
- 2 tablespoons flour
- Topping
- 2 -3 teaspoons margarine
- 2 -3 teaspoons sugar
- 1/2 teaspoon cinnamon
Directions

1Grease and flour two bread tins.

2Prheat oven to 325 degrees F.

3Coat rhubarb w/ 2 tablespoons flour.

4Combine flour, sugar, baking soda and salt in a large bowl.

5In separate bowl, combine egg, buttermilk, oil and vanilla.

6Mix well and stir into dry ingredients.

7Fold rhubarb into batter.

8Pour into bread pans.

9Sprinkle with topping mixture.

10Bake for 55 minutes or until toothpick comes out clean.

11Serve with strawberry preserves.
