- 1 1/2 c. raw rhubarb, cut fine
- 1 1/2 c. brown sugar, packed
- 1/2 c. butter or margarine
- 1 egg
- 1 tsp. vanilla
- 1 c. buttermilk or sour milk
- 1 tsp. baking soda
- 2 c. flour
- 1/2 tsp. salt
Directions

1Preheat oven to 350°.

2Cream the margarine and sugar.

3Add egg and vanilla; mix.

4Add buttermilk or sour milk and mix.

5(To make sour milk, add 1 tablespoon of lemon juice or vinegar to 1 cup measure and fill to 1 cup with milk.) Measure dry ingredients onto wax paper and stir to mix.

6Add to wet ingredients and mix.

7Pour into a 9 x 13-inch greased and floured cake pan. Sprinkle with topping.
