- 2 lb. rice
- 2 c. peas (any kind of your choice)
- 3 Tbsp. oil (olive oil)*
- 1 pkg. dried chicken soup mix
- pinch of seasoning
- 1 small onion, finely chopped
- 2 c. diced chicken, already boiled
- 1 to 2 c. raisins or grapes and nuts
- 3 Tbsp. sugar or sugar substitute*
Directions

1Soak peas overnight or use 2 cans, drained.

2Cook peas 20 minutes.

3Add rice.

4Cook until soft, approximately another 15 minutes).

5Add chicken soup mix, chopped onion, diced chicken, raisins, nuts, sugar and oil.

6Stir.

7Heat just before serving. Mmm!
