- 1 c. uncooked rice
- 2 c. water
- 1/2 tsp. salt
- peel of an orange or lemon
- 3 c. milk
- 1 stick cinnamon
- 3/4 c. sugar
- 1/4 c. seedless raisins
- 2 Tbsp. dark rum
Directions

1Combine rice, 2 cups water and salt in 2 to 3-quart saucepan. Bring to a boil; stir once or twice.

2Place orange peel on top of rice.

3Reduce heat.

4Cover and simmer 15 minutes or until rice is tender and liquid is absorbed.

5Remove and discard orange peel.
