Rice Pudding

Ingredients

  • 3/4 c. rice
  • 3 c. water
  • 1 Tbsp. butter
  • 1 tsp. salt
  • 2 eggs
  • 1 c. sugar
  • 1 qt. half and half
  • 2 tsp. vanilla

Directions

    Simmer rice in water with butter and salt for 1/2 hour or until stiff.

    Add half and half; cover.

    Bring to boil.

    Boil 20 minutes, stirring frequently.

    In separate bowl, beat eggs, sugar and vanilla.

    Add to rice and bring to boil.

    Remove from stove. Sprinkle with cinnamon.

    Refrigerate.

    (Best when done in a double boiler.)
