Rice Pudding With Fruit Compote

- 2 cups milk
- 3/4 cup sugar
- 2 tsp vanilla extract
- 2 1/2 cups long-grain white rice
- 1/4 cup heavy cream
- 7 oz dried fruit, such as apricots, cherries, apples and raisins
- 1 stick cinnamon
Directions

1Preheat oven to 350°F. Lightly grease a 6 1/2 cup baking dish. Place milk, 1/2 cup of sugar, vanilla and rice in prepared dish. Bake, uncovered, for 45 mins or until milk is absorbed. Remove pudding from oven; skim off skin. Stir in cream.

2Meanwhile, put 1 cup cold water, the dried fruit, cinnamon stick and remaining sugar in a small saucepan. Bring to a boil. Reduce heat and simmer, uncovered, for 5 mins or until syrup thickens a little. Remove from heat. Let stand for 5 mins. Remove cinnamon stick.

3Serve rice pudding warm, topped with compote.
