Ingredients

  • 1/2 vanilla bean, split and seeded
  • 3/4 c sugar
  • 3/4 muscat de beaumes de Venise
  • 1/4 c water
  • 4 c cherries bing or brooks
  • Cream
  • 1 vanilla bean, split and seeded
  • 1/2 c mascarpone cheese
  • 1 1/2 c heavy cream
  • 3 tbs sugar
  • Thyme

    Preheat oven to 300 deg

    Combine vanilla, orange, sugar, wine, water in large shallow ovenproof pot; bring to simmer over med heat. When sugar dissolved, add cherries. Place pot in oven and roast until cherries have softened, stirring occasionally, about 45 min.

    Remove and cool.

    Make cream inmed bowl. Stir vanilla and mascarpone cheese. Add remaining cheese and vanilla seeds and sugar. Beat w elec mixer on med speed until stiff peaks form. Place warm cherries in bowl and top w cheese.
