- 2 Tbsp. total: basil, thyme and rosemary
- 2 tsp. black pepper
- kosher salt to taste
- 1 Tbsp. olive oil
- 1/4 c. olive oil
Directions

1Preheat oven to 425°.

2Coat bottom of cookie sheet with 1 tablespoon olive oil.

3Set aside.

4Wash potatoes but do not peel! Cut in 1/4-inch chunks (steak fry size).

5Mix with remaining ingredients and spread out on a cookie sheet.

6Cook until brown and crisp.
