Ingredients

  • 1 whole cauliflower, broken up into florets
  • 1 or 2 yellow squash and green zucchini, quartered
  • 8 garlic cloves, sliced
  • 1 packages cherry tomatoes, left whole
  • 1/2 each red, yellow, orange bell peppers, sliced
  • 1 cup olive oil
  • 2 tbsp fresh thyme & rosemary

    Preheat oven to 350

    Place all vegetables in a large bowl, pour in olive oil, fresh herbs, salt & pepper.

    Bake 45 minutes to 1 hour.
