- 16 oz Rock Cod fillet
- 2 cups grape/sugar plum tomatoes
- 1 red bellpepper, julienned
- 3 scallions, thinly sliced
- 4 Thai (or any hot) chili, thinly sliced
- 1 c. Thai Basil leaves
- 2 Tbsp olive oil
- 3 Tbsp Balsamic vinegar
- Salt to taste
Directions

1Preheat oven to 400F

2Place fillet in a baking dish, place

3Sprinkle chili over the fillets

4Cover with Thai basil and then scallions, bell peppers and tomatoes

5Drizzle olive oil and vinegar

6Sprinkle with salt

7Tightly cover baking dish with foil and place in oven for about 15-20 minutes

8Remove from oven, uncover and place under broiler for about 2-3 minutes, until the top is slightly browned
