Rock Cod With Thai Basil

  • 16 oz Rock Cod fillet
  • 2 cups grape/sugar plum tomatoes
  • 1 red bellpepper, julienned
  • 3 scallions, thinly sliced
  • 4 Thai (or any hot) chili, thinly sliced
  • 1 c. Thai Basil leaves
  • 2 Tbsp olive oil
  • 3 Tbsp Balsamic vinegar
  • Salt to taste

    Preheat oven to 400F

    Place fillet in a baking dish, place

    Sprinkle chili over the fillets

    Cover with Thai basil and then scallions, bell peppers and tomatoes

    Drizzle olive oil and vinegar
  6. 6
    Sprinkle with salt

    Tightly cover baking dish with foil and place in oven for about 15-20 minutes

    Remove from oven, uncover and place under broiler for about 2-3 minutes, until the top is slightly browned
