Rye Sour Bread

Ingredients

  • 1/2 c flour
  • 1t yeast
  • 3T water
  • 1T milk
  • 1/2 c water
  • 2T caraway seeds
  • 1 1/2c rye flour
  • 1 3/4c bread flour
  • 1 1/4 t yeast
  • 2t salt
  • 2T sugar

Directions

    Put first four ingredients in a bowl and let rest for 12 hours. Put in bread machine with the remaining ingredients. Run on dough cycle. Let rest in machine an additional 2hours.

    Shape into an oblong rectangle on a cookie sheet. Let rest 1 1/2 hours. Heat oven gto 450 degrees. Put in bread on cookie sheet and scatter ice cubes on bottom of oven.

    Close oven door and reduce heat to 350 degrees for 45 minutes.
