  • 1 1/2 lb. hamburger or wild meat
  • 1/2 lb. pork, ground
  • 2 tsp. liquid smoke
  • 1/2 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1/4 tsp. mustard seed
  • 3 Tbsp. curing salt
  • 1/2 c. water

    Mix all ingredients well.

    Refrigerate in a covered bowl.

    The following two mornings, mix the ingredients well and return to refrigerator.

    On fourth day, form into rolls, place in pans and bake eight hours at 180°.

    An alternative method is to wrap the rolls in foil, prick the foil and boil for 1 hour.

    Let the salami set 24 hours before eating.
