Ingredients

  • 4 salmon fillets, preferably wild salmon
  • 14 cup Dijon mustard
  • 2 limes, juice and zest of
  • 14 cup tequila
  • 2 tablespoons ginger, freshly grated
  • 14 cup olive oil
  • 12 teaspoon dill
  • 12 cup yogurt, preferably organic
  • 1 dash Old Bay Seasoning
  • 12 cup honey
  • 1 tablespoon salt
  • 14 tablespoon pepper

Directions

    Spray cooking spray in a baking dish and place the salmon skin-side down.

    In a medium bowl, combine remaining ingredients with a whisk.

    Pour over the salmon and allow to marinate for at least 1/2 hour.

    Then cook at 400 for 8-10 minutes, depending on thickness [watch it].

    Serve with wild rice and asparagus.
