- 5 slices bread, crusts removed and cut into 1-inch cubes
- 1 c. milk
- 2 Tbsp. butter
- 1 can red salmon
- 3 eggs, separated
- salt
- 1/4 c. grated cheese
Directions

1Heat milk in double boiler; add bread, butter and liquid from salmon.

2Add beaten egg yolks and salt; cook until thick.

3Add cheese.

4Cool and add salmon.

5Beat egg whites until stiff and fold into mixture.

6Bake in buttered dish.

7Place dish in pan of water and bake 1 hour at 350°.
