Salmon Loaf

Ingredients

  • 1 (6 1/2 oz.) can pink salmon, drained (I use Chicken of the Sea brand)
  • 2 Tbsp. mayonnaise
  • 1 tsp. lemon juice
  • 2 Tbsp. finely chopped celery, carrots or pepper (your choice)
  • 1 Tbsp. finely chopped onions
  • 1/4 tsp. salt
  • dash of pepper
  • 1/2 c. bread crumbs
  • 1 large egg, slightly beaten

Directions

    In a small bowl combine first three ingredients.

    Add next four ingredients.

    Stir in bread crumbs.

    Add egg.

    Mix well.

    Shape into loaf and place in greased 1-quart baking dish.

    (I bake mine in small greased loaf pan.)

    Bake 25 minutes in preheated 350° oven.

    Serves 2 or 3.
