- 1/2 gal. chopped ripe tomatoes
- 3 large onions, coarsely chopped
- 2 to 4 finely chopped jalapeno peppers
- 2 to 4 cayenne peppers, finely chopped
- 2 bell peppers, chopped
- 1 Tbsp. minced garlic
- 3 Tbsp. sugar
- 1/2 c. vinegar
- 2 to 3 dashes paprika
- 1 tsp. ginger
- 1 tsp. black pepper
- 1 Tbsp. salt
Directions

1Put whole tomatoes in pot of boiling water for about 2 minutes, then put into cool water.

2This makes it easy to remove skins.

3In a large pot, bring all ingredients to a boil. Reduce heat and simmer for 1 to 3 hours or until desired thickness, stirring often.

4Pour into pint jars, then process in water bath for about 4 to 5 hours.

5Makes 6 to 8 pints.
