Salsa Enchiladas

- 1 jar salsa
- 1-1/2 cup cottage cheese
- 2 cups cheddar cheese
- Green onions, chopped
- 1 can chopped olives
- 8 flour tortillas
Directions

1In 13x9x2-inch baking dish, pour small layer of salsa over the bottom of dish.

2In bowl, mix cottage cheese, 1 cup cheddar cheese, green onion, and olives.

3Take about 1/4 cup of mixture and place inside a tortilla.

4Roll up and place in dish on top of salsa.

5Finish all the rest the same (no need to use a toothpick to hold together, they will stay on their own).

6Pour the rest of the salsa over the top of enchiladas.

7Add remaining cheese on top of enchiladas.

8Bake covered at 375F for 20-25 minutes.
