Ingredients

  • 8 c. fresh ripe tomatoes, peeled, minced, seeded
  • 4 c. green bell pepper, seeded and minced
  • 2 c. warm pepper (banana, jalapeno), minced and seeded
  • 1-1/2 c. onion, minced
  • 3 teaspoon salt (no iodine)
  • 4 cloves garlic, chopped
  • 2 c. cider vinegar

Directions

    Combine tomatoes, peppers, onions, garlic, vinegar and salt.

    Bring to a boil, reduce heat and simmer 20 min.

    Put on water for warm water bath at this point.

    Place jar seals in boiling water and keep hot.

    Pour salsa in warm jars, leaving 1/4 inch headspace.

    Wipe jar lip and place seal on with screw-on cap.

    Place jars in warm water bath.

    Process 30 min in soft boiling water.

    Makes 8 pints.

    Note: Can increase tomatoes to 9 c. and decrease warm pepper to 1 c. for milder salsa.
