Ingredients
- 8 c. fresh ripe tomatoes, peeled, minced, seeded
- 4 c. green bell pepper, seeded and minced
- 2 c. warm pepper (banana, jalapeno), minced and seeded
- 1-1/2 c. onion, minced
- 3 teaspoon salt (no iodine)
- 4 cloves garlic, chopped
- 2 c. cider vinegar
Directions

1Combine tomatoes, peppers, onions, garlic, vinegar and salt.

2Bring to a boil, reduce heat and simmer 20 min.

3Put on water for warm water bath at this point.

4Place jar seals in boiling water and keep hot.

5Pour salsa in warm jars, leaving 1/4 inch headspace.

6Wipe jar lip and place seal on with screw-on cap.

7Place jars in warm water bath.

8Process 30 min in soft boiling water.

9Makes 8 pints.

10Note: Can increase tomatoes to 9 c. and decrease warm pepper to 1 c. for milder salsa.
