- 5 lb. bag potatoes
- 2 medium onions
- 1 lb. pkg. Velveeta
- 1/4 c. imitation bacon bits
- 1 to 2 c. mayo
- salt to taste
- pepper to taste
Directions

1Peel potatoes or leave skins on.

2Cut into 1 1/2 inch cubes. Parboil until edges are transparent.

3(Do not overcook.)

4Drain. While still hot pour into a large casserole.

5Add onions (chopped), Velveeta (cubed), bacon bits, mayo, salt and pepper; mix well. Cover and put in refrigerator overnight.

6(You can cook right away, but not as good.)

7Uncover and cook at 375° for 1 hour to 1 1/2 hours.

8(Do not stir while baking.)

9Everything will melt together near the end.
