- 1 1/4 lb. chicken breasts, boned and skinned
- 1 tsp. paprika
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. olive oil or butter
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1 garlic clove, minced
- 1 (10 oz.) can diced Ro-Tel tomatoes and green chilies
- 1 1/2 c. instant rice, uncooked
- 3/4 c. (3 oz.) Monterey Jack cheese, shredded
- 1 can chicken broth
Directions

1Cut chicken into thin strips.

2Sprinkle with paprika, salt and pepper.

3Heat olive oil or butter in 10-inch skillet over medium-high heat.

4Add chicken to oil and cook for 2 minutes.

5Add chopped onion, green pepper and garlic to skillet.
