Ingredients
- 1 md. potato, pared, cubed, and boiled
- 2-1/2 cup boiling water from potato
- 1 pkg. rapid-rise yeast
- 1 tbsp. salt
- 3 tbsp. sugar
- 3 tbsp. shortening
- 5 to 7 cups flour
- 1/4 tsp. ginger *
Directions

1Mash the potato and add the potato water, salt, sugar, shortening and ginger.

2In a medium sized bowl mix 5 cups flour and yeast, add luke warm liquid mixture and work into flour.

3Knead batter into remaining 2 cups of flour.

4Let rest in a warm place for 30 minutes.

5Work down and form into buns or loaves.

6Place into pans and let rise until doubled in size.

7Bake at 375F for 35 minutes.

8Remove from pans and brush oil or shortening over entire surface of loaves.
