- 3 lb. beef round
- 4 bay leaves
- 1/2 tsp. pepper
- 1 stalk celery
- 2 1/2 c. water
- 8 whole cloves
- 2 medium carrots, sliced
- 1 1/2 c. red wine vinegar
- 1/4 c. butter or margarine
Directions

1Rub meat with salt to taste and pepper.

2Place in Tupperware. Cover with spices and vegetables blended with vinegar in a blender.

3Heat vinegar with water to boil and pour over meat.

4Let cool.

5Cover and refrigerate 24 to 48 hours.

6Turn.

7Dry with paper towel.

8Strain marinade over after browning in butter. Cover and simmer 2 hours.
