  • 4 lb. English cut or sirloin tip
  • 1 large sliced onion
  • 1 1/2 Tbsp. mixed pickling spices
  • 3 Tbsp. honey
  • 4 c. vinegar
  • water to cover
  • 16 gingersnaps

Directions

    Marinate meat in vinegar, onions, honey and spices 4 hours or overnight.

    Brown meat and cook onions, salt and pepper; cover with marinade.

    Roast, covered, at 350° for 20 minutes per pound, plus 20 minutes.

    Thicken pan juices with gingersnaps.
