- 1/4 teaspoon gingerroot, grated
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 teaspoons vegetable oil
- 1 egg
- 1/2 cup flour
- 1/2 cup milk
- 1/2 cup seltzer water
- 1/4 cup chives, chopped
- 1/4 cup unsalted butter, melted
Directions

1Mix all ingredients, through seltzer, in blender and blend until smooth.

2Make crepes, to whatever size you want: brush crepe pan with melted butter (or spray with Pam), pour batter and tilt pan to cover. Cook 30 seconds, flip and cook 30 seconds more. Place crepe on wire rack and continue making remaining crepes.

3Use immediately, or stack when cool and wrap in plastic until ready to serve.
