Scalloped Cabbage

  • 1 small cabbage, quartered and shredded
  • salt and pepper
  • 2 Tbsp. butter
  • 1/4 c. finely cut celery
  • 2 Tbsp. flour
  • 1 c. milk

    Shred a quartered small cabbage as for coarse cole slaw.

    Cook quickly in covered pan with a little water to keep from burning. Cook just until tender-crisp, 5 to 15 minutes for green or white cabbage.

    Drain thoroughly; season with salt and pepper.

    Put butter and celery in saucepan.

    Cook slowly 5 minutes.

    Stir in flour; blend.

    Stir in 1 cup milk slowly.

    Cook until thick.

    Stir constantly for about 5 minutes.

    Season to taste.

    Add cabbage. Spoon into baking pan (13 x 9-inch).

    Cover with crumbs; dot with butter.

    Bake at 325° to 350° until well heated and browned on top. Serves 4 or 5.
