  • 1 1/2 c. thinly sliced onions
  • 4 1/2 c. thinly sliced potatoes
  • 3 t. salt, divided
  • 3 T. butter
  • 2 T. plus 1 t. flour
  • 1/8 t. pepper
  • 1 3/4 c. milk
  • 1/3 to 1/2 c. shredded Cheddar cheese (optional)

    Bring 1 inch of water to boil in a pan; add onions and potatoes and 2 teaspoons salt. Boil for 5 minutes, drain. Melt butter in saucepan, blend in flour, pepper and remaining teaspoon of salt. Add milk and cook until thickened, stirring constantly. Combine potatoes and onions with cream sauce. Place in a shallow baking dish and sprinkle cheese on top, if desired. Bake, uncovered, at 400 ° for 35 minutes or until golden and bubbly. Serves 4 to 5.
