  • 1/3 c. margarine
  • 1/2 c. minced onion
  • 1/3 c. flour
  • 3 c. milk
  • 2 1/2 c. grated Cheddar cheese
  • 1 Tbsp. salt
  • 1/4 tsp. dry mustard
  • 1/8 tsp. pepper (black)
  • 10 c. thinly sliced potatoes
  • 1/4 tsp. paprika

Directions

    In medium saucepan, melt margarine.

    Add onion and saute until soft.

    Stir in flour.

    Cook over low heat for 1 minute.

    Gradually add milk, stirring constantly.

    Cook over medium heat until slightly thickened and begins to boil.

    Add 1 cup cheese, salt, mustard and pepper.

    Remove from heat; stir until cheese is melted.
