- 6 oz. onion cheese
- 1/4 c. dry white wine
- 1 medium onion, chopped
- 1 c. real mayonnaise
- 1 lb. bay scallops
- 1/2 lb. mushrooms, sliced
Directions

1Stir together the cheese, mayonnaise and wine; reserve.

2In a 10-inch skillet over medium-high heat, melt 2 tablespoons butter; add the scallops and cook, stirring, just until they are opaque, a minute or so.

3With a slotted spoon, remove scallops to paper toweling to drain.

4Add the remaining 2 tablespoons butter to the skillet with the onion; cook gently until slightly golden and add mushrooms.

5Cook rapidly, stirring, so they do not release their liquid, a few minutes.

6Turn off heat and stir in the reserved cheese mixture and scallops.

7Bake in casserole until warmed through.

8Serve over noodles.
