- Salsa
- 1/3 cup diced green apple
- 1/3 cup diced green melon
- 3 cups diced pineapple
- 3 tablespoons finely diced red onions
- 2 tablespoons finely chopped fresh cilantro
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 teaspoons lime juice
- 1/2 teaspoon salt
- Scallops
- 24 sea scallops (about 1 1/4 inch diameter)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 4 teaspoons butter
Directions

1In bowl combine all salsa ingredients and mix well.

2The sweet vs tart balance can be adjusted to your taste by adding more sugar or lime juice.

3Sprinkle each side of the scallops with salt, pepper and sugar.

4In skillet, melt butter over medium high heat.

5Right when butter starts to turn color, add scallops and cook 1 1/2-2 minutes on each side or until they are lightly browned.

6(Make sure they do not overcook!) Transfer scallops to plate and serve with salsa.
