Scrambled Pizza Eggs

Ingredients

  • 1 lb. pork sausage (lean)
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 (4 oz.) can mushroom stems and pieces, drained
  • 1 (16 oz.) can tomatoes
  • 1/2 tsp. whole oregano
  • salt to taste
  • 8 eggs, slightly beaten
  • 2 c. shredded Cheddar cheese, divided

Directions

    Crumble sausage into a skillet.

    Add onion and green pepper. Cook over medium heat until sausage is done.

    Drain off drippings and discard.

    Add tomatoes, mushrooms, oregano and salt to skillet; simmer 10 minutes or until most of liquid evaporates, stirring often.

    Add eggs and 1 3/4 cups cheese, stirring until eggs are set and cheese is melted, over medium heat.

    Sprinkle with remaining 1/4 cup cheese; serve hot.
