- 4 eggs, lightly beaten
- 4 Tbsp. butter
- 1 to 2 cloves garlic, finely chopped (optional)
- 1/4 c. onion, chopped
- 1 large potato, diced in 3/8-inch squares
- 1 Tbsp. water
- salt to taste
- Tabasco to taste
Directions

1Beat eggs lightly and add water, salt and Tabasco.

2Set aside. Chop onion and garlic; set aside.

3Melt butter in skillet; add cubed potatoes.

4Saute in butter until soft and very lightly brown on edges over medium heat; do not let butter burn.

5Add onion and garlic and let wilt slightly.

6Pour eggs over and scramble. Serves 2 to 3.
