Scrambled Potatoes

  • 4 eggs, lightly beaten
  • 4 Tbsp. butter
  • 1 to 2 cloves garlic, finely chopped (optional)
  • 1/4 c. onion, chopped
  • 1 large potato, diced in 3/8-inch squares
  • 1 Tbsp. water
  • salt to taste
  • Tabasco to taste

Directions

    Beat eggs lightly and add water, salt and Tabasco.

    Set aside. Chop onion and garlic; set aside.

    Melt butter in skillet; add cubed potatoes.
  4. 4
    Saute in butter until soft and very lightly brown on edges over medium heat; do not let butter burn.

    Add onion and garlic and let wilt slightly.

    Pour eggs over and scramble. Serves 2 to 3.
