Seafood Casserole

Ingredients

  • 2 cloves chopped garlic
  • 1 c. chopped onions
  • 1 c. chopped bell peppers
  • 1 c. chopped celery
  • 1 block butter
  • 1 can cream of mushroom soup
  • 1 can Cheddar cheese soup
  • 1 medium jar diced pimento, drained
  • 1 lb. seafood (crawfish, shrimp or fish)
  • 2 Tbsp. Tabasco sauce
  • 1/3 c. chopped parsley
  • 1 c. chopped green onions
  • 2 packed c. cooked rice

Directions

    Saute the first 4 ingredients in 1 block of butter until soft. Add the soups and pimento.

    Mix and heat until melted. Add the seafood and Tabasco sauce. Cook about 15 to 20 minutes. Add the remaining ingredients.

    Mix well and put in casserole dish. Cover with bread crumbs and bake at 350° for 30 minutes.
