Seafood - Spinach - Orzo

Ingredients

  • 12 large shrimp, raw, peeled with tail on or 8 large fresh scallops
  • 1 garlic clove, minced
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 12 lemon, juiced
  • 3 tablespoons butter
  • 1 teaspoon green onions or 1 teaspoon parsley, chopped
  • 1 (16 ounce) package fresh spinach, washed and stems removed
  • 1 cup orzo pasta, cooked according to directions
  • 12 lemon, wedged

Directions

    Saute the fresh spinach in a non-stick medium skillet in 1 T. butter and a little salt and pepper - dont' over cook, it cooks very quickly and I only cook it for a minute or so.

    Then put the spinach on top of the precooked, warm orzo (follow the box instructions)- place it on an attractive serving plate.

    Saute shrimp (or scallops) in 2 T. butter and the garlic and lemon juice.

    Cook for 5-6 minutes, don't overcook.

    Top the spinach/orzo with the seafood - sprinkle with the green onion if desired - serve with lemon wedges.

    Best served immediately.
