Ingredients
- 2 c. chopped fresh broccoli
- 1 c. shredded carrots
- 1/2 c. chopped onion
- 1 clove garlic, finely chopped
- 2 Tbsp. vegetable oil
- 1 Tbsp. flour
- 1/2 c. skim milk
- 1 1/2 c. cottage cheese
- 1/4 c. Parmesan cheese
- salt and pepper to taste
- 8 to 10 creamed jumbo shells, cooked
Directions

1Cook vegetables in oil in skillet until tender-crisp.

2Stir in flour and milk; cook until thickened.

3Remove from heat; add cottage cheese, 2 tablespoons Parmesan and salt and pepper.

4Stuff shells and place in shallow baking dish.

5Top with remaining Parmesan.

6Bake, covered, at 325° for 25 minutes.

7Refrigerate leftovers.
