Sensational Stuffed Shells

Ingredients

  • 2 c. chopped fresh broccoli
  • 1 c. shredded carrots
  • 1/2 c. chopped onion
  • 1 clove garlic, finely chopped
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. flour
  • 1/2 c. skim milk
  • 1 1/2 c. cottage cheese
  • 1/4 c. Parmesan cheese
  • salt and pepper to taste
  • 8 to 10 creamed jumbo shells, cooked

Directions

    Cook vegetables in oil in skillet until tender-crisp.

    Stir in flour and milk; cook until thickened.

    Remove from heat; add cottage cheese, 2 tablespoons Parmesan and salt and pepper.

    Stuff shells and place in shallow baking dish.

    Top with remaining Parmesan.

    Bake, covered, at 325° for 25 minutes.

    Refrigerate leftovers.
