  • 8 (4 oz.) flounder fillets
  • 1 tsp. lemon juice
  • 1/4 tsp. pepper
  • 1/2 c. diced onion
  • 1/2 c. diced green pepper
  • 1/2 c. diced celery
  • 1/4 c. frozen apple juice concentrate, thawed and undiluted
  • 2 tsp. toasted sesame seed

Directions

    Place fillets in a 13 x 9 x 2-inch baking dish coated with vegetable cooking spray.

    Drizzle with lemon juice; sprinkle with pepper.

    Saute onion, green pepper and celery in apple juice concentrate until crisp-tender; spoon over fillets.

    Sprinkle with sesame seed; bake at 350° for 20 to 25 minutes or until fish flakes easily when tested with a fork.
