- 20 Tbsp. very fine granulated sugar
- 5 c. flour
- 1 lb. butter
Directions

1Sift sugar and flour together 3 times.

2Place butter in a bowl and break it into chunks with fingertips.

3Work in the flour and sugar mixture, a little at a time, until the mixture resembles cornmeal. Turn the dough out on a floured board and knead until it begins to crack. Roll it out 3/8-inch thick. Cut into triangles and put the triangles on baking sheets. Bake the shortbread in a moderately slow 325° oven for 20 minutes or until it is very lightly browned.
