- 1/2 c. frozen, chopped onion
- 2 Tbsp. margarine
- 1 1/2 c. water
- 1 lb. peeled and deveined, raw shrimp, cut in bite size pieces
- 3 c. frozen hash brown potatoes
- 4 1/2 c. milk
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/4 c. chopped parsley
Directions

1Cook onion in butter in a large saucepan over medium heat until tender.

2Add water and bring to a boil.

3Add shrimp and cook 3 to 5 minutes until no longer translucent in center.

4Remove shrimp to a bowl with slotted spoon.

5Add potatoes to saucepan; simmer 4 to 6 minutes until tender.

6Add milk.

7Bring just to a boil, stirring occasionally.

8Remove form heat.

9Stir in cheese and parsley.

10Let stand 2 minutes until cheese melts.

11Stir in shrimp and serve.
