Ingredients

  • 1 cup shredded iceberg lettuce
  • 3 tbsp chopped cilantro/coriander
  • 3 tbsp chopped green/spring onion
  • 2 tomatoes, chopped
  • 1/4 cup cucumber, chopped
  • 12 ready to eat shrimp
  • 1/3 lime
  • 1 tbsp olive oil
  • 1 avocado, chopped
  • 4 tbsp tomato ketchup
  • 3 tbsp fresh mayonnaise
  • 1 dash of paprika

Directions

    In a large mixing bowl, combine lettuce, tomato, cucumber, cilantro and shrimp.

    Squeeze the lime over ingredients and add the olive oil, mixing thoroughly.

    Fold in avocado chunks carefully as to keep them in tact

    In separate bowl, mix the mayo, ketchup and paprika until a light pink sauce.

    Fill serving bowl halfway with salad mixture, then drizzle a tbsp of sauce over.

    Continue to fill the bowl with salad, drizzle a further 1-2 tbsp sauce ontop.

    Then sprinkle green /spring onion ontop to garnish.
