Ingredients
- 1 cup shredded iceberg lettuce
- 3 tbsp chopped cilantro/coriander
- 3 tbsp chopped green/spring onion
- 2 tomatoes, chopped
- 1/4 cup cucumber, chopped
- 12 ready to eat shrimp
- 1/3 lime
- 1 tbsp olive oil
- 1 avocado, chopped
- 4 tbsp tomato ketchup
- 3 tbsp fresh mayonnaise
- 1 dash of paprika
Directions

1In a large mixing bowl, combine lettuce, tomato, cucumber, cilantro and shrimp.

2Squeeze the lime over ingredients and add the olive oil, mixing thoroughly.

3Fold in avocado chunks carefully as to keep them in tact

4In separate bowl, mix the mayo, ketchup and paprika until a light pink sauce.

5Fill serving bowl halfway with salad mixture, then drizzle a tbsp of sauce over.

6Continue to fill the bowl with salad, drizzle a further 1-2 tbsp sauce ontop.

7Then sprinkle green /spring onion ontop to garnish.
