- 1 c. salad oil
- 1 c. flour
- 2 c. chopped onions
- 1 c. chopped celery
- 1 c. chopped bell peppers
- 2 cloves garlic, chopped
- 1 large can tomatoes
- 2 small cans tomato paste
- 1/4 tsp. red pepper
- 1/2 tsp. black pepper
- 3 lb. raw shrimp, deveined
- 2 Tbsp. chopped parsley
- 2 Tbsp. chopped scallion tops
- 6 c. water
- 3 tsp. salt
Directions

1Heat oil; stir in flour.

2Add onions, celery, peppers and garlic; cook until soft.

3Add tomatoes and tomato paste; mix well. Cook 5 minutes.

4Add water, red and black pepper; simmer 1 hour. Add shrimp; cook 15 minutes.

5Add parsley and scallions 5 minutes before serving.

6Serve over rice.
