Ingredients

  • 1 c. salad oil
  • 1 c. flour
  • 2 c. chopped onions
  • 1 c. chopped celery
  • 1 c. chopped bell peppers
  • 2 cloves garlic, chopped
  • 1 large can tomatoes
  • 2 small cans tomato paste
  • 1/4 tsp. red pepper
  • 1/2 tsp. black pepper
  • 3 lb. raw shrimp, deveined
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. chopped scallion tops
  • 6 c. water
  • 3 tsp. salt

Directions

    Heat oil; stir in flour.

    Add onions, celery, peppers and garlic; cook until soft.

    Add tomatoes and tomato paste; mix well. Cook 5 minutes.

    Add water, red and black pepper; simmer 1 hour. Add shrimp; cook 15 minutes.

    Add parsley and scallions 5 minutes before serving.

    Serve over rice.
