Ingredients

  • 1 lb. fresh shrimp in shells, headless
  • 2 bay leaves
  • 1/2 tsp. oregano
  • 1/4 tsp. rosemary
  • 1/2 tsp. thyme
  • 1/2 tsp. fresh ground black pepper
  • 1/8 tsp. salt
  • 8 cloves garlic, unpeeled and flattened
  • 1/4 c. olive oil
  • 1/4 c. chicken stock or white wine
  • dash of Tabasco sauce
  • sprinkle of crushed red pepper

Directions

    Saute shrimp with herbs and spices in olive oil, stirring regularly, until shrimp are almost done.

    Add wine or stock and simmer over very low heat for about 5 minutes, until liquid is about half cooked down.

    Serve in shells with lots of paper towels or dampened napkins.

    Serves 4 as an appetizer or 2 as a main course.
