- 1 1/2 lb. shrimp
- 4 bacon slices, cut into squares and fried until crisp
- 1 small minced onion
- 2 1/2 c. canned tomatoes
- 1 c. uncooked rice
- salt
Directions

1Partly cook and clean shrimps.

2Remove bacon from pan and drain.

3Add other ingredients to bacon fat.

4Place in double boiler and steam over hot water for 45 minutes.

5Stir in peeled, cooked shrimp and a pinch of chervil.

6Turn into a casserole. Bake in a moderate oven for 15 minutes.

7Serve with Mornay Sauce. Serves 6.
