Shrimp-Rice Soup

  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1/4 c. water
  • 28 oz. can tomatoes, cut up
  • 1/8 tsp. garlic powder
  • 1 1/2 c. water
  • 6 1/4 oz. pkg. long grain and wild rice mix
  • 16 oz. pkg. frozen, peeled, deveined shrimp
  • several dashes of hot sauce

Directions

    Simmer onion and pepper in large pan until tender.

    Add undrained tomatoes, garlic, 1 1/2 cups water and both rice mix packets.

    Bring to boil.

    Add shrimp and return to boil.

    Reduce heat, cover and simmer until rice is tender and shrimp are pink. Garnish with hot sauce.
