- 1 whole fish, about 2-3 lb. (try trout, Bronzino, red snapper, whatever is fresh)
- Thyme sprigs
- Dill
- Lemon slices
- Olive oil
- Sea salt
- Pepper
Directions

1Have your fishmonger gut and descale the fish.

2Rub the inside and outside with olive oil.

3Sprinkle salt and pepper inside and out.

4Stuff the cavity with herbs and lemon slices.

5Decorate the outside of the fish with herbs and lemon slices.

6Roast at 425 degrees for about 15-20 minutes, depending on the size of the fish.

7Serve on a platter with lemons.
